Meet our Judges & Business Supporters 

FUSE has proudly teamed up with local business legends Akimbo Bread, Costante Imports, Jamsheed Wines & La Sirène Brewing. These incredible Darebin businesses will use their expertise to judge entries of homemade produce and beverages in our Meet the Makers Competition and help decide our category winners. These businesses have been chosen due to sharing the same values as FUSE including a focus on sustainability, community and storytelling. They have generously contributed to the prize pool for different categories including private tastings, produce and merch!  

 

Akimbo Bread: Lindsay Oates – Judge of Sourdough Category 

Introducing Lindsay Oates, a chef-owner trained under Sunda's prestigious program, whose ascent has been nothing short of meteoric. From showcasing slow-fermented country loaves, hot cross buns, and fougasse on Instagram, he has swiftly transitioned to supplying some of Melbourne's most renowned restaurants and bars, including Aru, Bar Bellamy, and Sunhands. 

And let's not forget Louis McCoy, a skilled builder by trade, who not only co-founded but also meticulously crafted stages for the independent Victorian dance festival, Inner Varnika. His creative touch is evident in the vibrant ambiance of the store, characterized by off-white terrazzo tiles and burnt sienna details.  

 

Akimbo Bread:  Akimbo Bread was born in 2020 as a home business producing slow fermented, naturally leavened bread. Their Northcote shop now serves the local community and delivers artisan sourdough to some of the best restaurants and bars in the City of Darebin. 

 

Costante Imports: David Fiorito - Judge of Produce Category 

Introducing David Fiorito. David hails from a rich heritage deeply rooted in culinary traditions. Born and raised in a family immersed in the art of pickling, preserving, and produce making, he has been involved in the family business, Costante Imports, from a young age – previously working as a cook. Loves to share his passion of making with friends and community – and currently also teaches salami making courses. 

Costante Imports: 

Established in 1968, Costante Imports is a Preston based family run business specialising in the sale of equipment for the production of small goods, pasta, wine, olive oil and regional Italian specialties as well as cookware.  

 

 

Jamsheed Wines: Elika Rowell & Gary Mills – Judges of Wine Category 

Gary (Gaz, Gazza, G-Millie, Millsy) and Elika (sounds like Metallica). We’re the parents of the kid you keep seeing on our grid, but also the bodies and brains behind Jamsheed.  
Gary started Jamsheed way back in 2003, after a two year stint at California’s great Ridge Vineyards. Concentrating on making wines with integrity (minimal intervention), showcasing some of Victoria’s greatest growing regions. He can lift heavy things and make not terrible wine. 
 
Elika came along some time later, bringing with her 20+ years of hospo magic (most recently coffee roaster and green bean buyer) and officially jumped ship when the bar finally opened. She does all the things Gary doesn’t do, and a little bit of making. Elika and Gary built Jamsheed winery their bare hands (and lots of blood sweat and tears) and they hope you can feel that special energy when you walk into the winery.  

 

Jamsheed Wines:  

Melbourne's first fully functioning winery and restaurant based in the northern suburb of Preston. 

The Jamsheed label began in 2003 with a focus on single vineyard Syrahs and aromatic whites from unique sites in Victoria. It has since grown to encompass three label offerings: Jamsheed Single Vineyard Wines, continuing to showcase the unique terroirs of Victoria; Apricity Wines, focused on working with obscure and experimental varieties; and Park Wines, making wines that can be poured liberally in the park or at your dining table.   

 

 

La Sirène: Costa Nikias – Judges of Beer Category 

Introducing Costa Nikias, Founder and Chief Artisan at La Sirène. Costa found his way into creating Artisan Ales from the wine world. After studying Winemaking & Viticulture in South Australia and numerous vintages for one of Australia’s most respected pinot producers in the Gippsland region, he gravitated to the wonderful world of Farmhouse & Wild Ales. He is the chief who steers the La Sirène ship on her voyage and doubles as maintenance engineer, chief brewer, debt collector, delivery driver, hand bottler & occasionally La Sirène tour guide. 

And meet Eva Nikias, co-founder, chief in general & oracle for all things at La Sirène. Eva has a background in business and finance across diverse industries such as television, advertising and fashion. Eva works closely with Costa to drive the La Sirène ship (ships best mate perhaps) and ensures the culture is authentic, vibrant & progressive. 

 

La Sirène Brewing: 

La Sirène Brewing is an artisanal brewery grounded in the spirit of Farmhouse brewing. Founded in 2010, they’re brewery is based in Reservoir. They specialise and focus on creating Farmhouse, Wild, Oak-Aged and Coolship Ales that speak of Place, Time & Season.
